During some major expansions of Boudreaux's Jambalaya Junction it was deemed that each individual store would become it's own Limited Liability Corporation under the Jambalaya Junction umbrella, but any information for each of those individual corporations would need to have somewhere to be stored. IT was at this time that Cajun Food Holdings, Inc. was founded.
